Spinach Omelette

2 cups baby spinach

3 eggs

1 pinch salt

1 pinch freshly ground black pepper

½ cup grated tasty cheese

Heat a little olive oil in a frying pan, gently fry the fresh baby spinach, spreading it out evenly in the pan and allow to wilt for about 30 seconds.

Beat three eggs in a bowl with salt and freshly ground pepper, and pour into the pan. Lift and tilt the pan to get the egg to spread out evenly.

Sprinkle the tasty cheese over the centre of the omelette, then fold over in half. Allow it to sit for a few seconds so the cheese melts.
