| Mushroom And Goats Cheese Omelette |

| 2 button mushrooms, medium sized |
| 20 g goat's cheese |
| 2 Tbs cream |
| 3 sprigs parsley |
| 1 Tbs butter |

Melt butter in a 20cm small pan. Slice mushrooms and fry. |

Using a fork, whisk eggs and cream in a bowl. Pour into pan and move around vigorously for 30 seconds. |

Remove from heat and add small chunks of goat's cheese and chopped parsley. Place under grill or in a hot oven for a further minute. |
