Mushroom And Goats Cheese Omelette

3 eggs

2 button mushrooms, medium sized

20 g goat's cheese

2 Tbs cream

3 sprigs parsley

1 Tbs butter

Melt butter in a 20cm small pan. Slice mushrooms and fry.

Using a fork, whisk eggs and cream in a bowl. Pour into pan and move around vigorously for 30 seconds.

Remove from heat and add small chunks of goat's cheese and chopped parsley. Place under grill or in a hot oven for a further minute.

Preparation Time: 5 minutes

Cooking Time: 7 minutes

Total Time: 12 minutes
