| Coriander Chicken Omelette |
| 85 g packet chicken flavour 2 Minute Noodles |
| 4 eggs |
| 80 g chopped cooked skinless chicken |
| 40 g bean sprouts, trimmed |
| 2 Tbs chopped fresh coriander |
| 2 Tbs chopped spring onions |
| 1 tsp kecap manis (thick, sweet soy sauce) |

Prepare noodles according to packet directions, reserving the flavour sachet. |

Whisk the eggs and flavour sachet in a bowl. Stir in drained noodles, chicken, bean sprouts, coriander and onions. |

Pour omelette mixture into a non-stick frying pan over medium heat. Draw in sides of omelette to allow uncooked egg mixture to run to side of pan and set. When almost cooked through, invert omelette onto a plate, then slide back into frying pan, uncooked side down. Cook until set. Or, cover pan handle with foil and place the pan under a hot grill until set. |

Drizzle omelette with kecap manis and garnish with extra coriander and green onions, if desired. |
