Chorizo And Ricotta Omelette

1 whole chorizo sausage

2 Tbs ricotta cheese
|
|
3 eggs
|
|
2 Tbs cream
|
|
1 Tbs butter
|
|
3 sprigs flat leaf parsley, to garnish

Melt butter in a 20cm small pan. Fry slices of chorizo sausage in pan.

Using a fork, whisk eggs and milk or cream in a bowl. Pour into pan and move around vigorously for 30 seconds.

Remove from heat and add ricotta cheese. Place under grill or in a hot oven for a further minute. Garnish with parsley.
