Bacon And Tomato Omelette

2 rashers bacon, cut into small pieces

1 small tomato, chopped into small pieces
|

3 eggs

2 Tbs milk
|
|
1 Tbs butter
|
|
3 sprigs flat leaf parsley, to garnish

Melt butter in a 20cm small pan. Fry bacon.
|

Using a fork, whisk eggs and milk or cream in a bowl. Pour into pan and move around vigorously for 30 seconds.

Remove from heat and add chopped tomato. Place under grill or in a hot oven for a further minute. Garnish with parsley.
