Blackberry And Mango Clafoutis

3 eggs

½ cup sugar

½ cup apple sauce

1 cup plain flour

1 cup soy milk

½ tsp vanilla essence

350 g blackberries

½ mango, diced

½ cup pistachio nuts; chopped

Preheat the oven to 200°C. With a mixing bowl, beat the sugar and eggs with a wire whisk until they turn lighter in color. Gradually add in the apple sauce, beating to incorporate. Add the flour all at once and whisk until the batter is a smooth mixture.

Slowly pour in the soy milk and vanilla, whisking to combine. The batter should be very smooth and shiny.

Distribute the blackberries and diced mango in 6 dishes. Pour the batter over the fruit. Bake for approximately 20-30 minutes, until slightly browned and almost completely set in the middle. Serve warm, at room temperature or cold.

Top some chopped pistachio on the clafoutis before serving.
