Fresh Mint Chutney

This chutney is great with sautéed scallops, grilled shrimp, or grilled lamb.

1 cup packed fresh mint leaves

4 spring onions, coarsely chopped

1 small fresh green chili, coarsely chopped, including seeds

1 large clove garlic, chopped

¼ cup fresh lime juice

1 ½ Tbs water

2 tsp sugar

¾ tsp ground cumin

¾ tsp salt

Coarsely purée all ingredients in a food processor.
