Date Chutney

1.35 kg dates

450 g spring onions

225 g raisins

125 g currants

125 g sugar

50 g salt

25 g allspice

12 g mustard seed

1.2 litre vinegar

Cut the onions finely as far as the green tops.

Stone the dates and cut into small pieces.

Stone the raisins, then put all the ingredients into a preserving pan.

Cook thoroughly until a thick mixture forms.

Bottle hot and seal closely in warmed jars then label each jar.
