Cranberry Chutney

1 ½ cups fresh cranberries

16 dried apricot halves, quartered

¾ cup brown sugar

1/3 cup currants

2 Tbs fresh ginger, minced

2 Tbs cranberry juice

¾ tsp ground cumin

¼ tsp cayenne pepper

Combine all ingredients in a heavy saucepan and cook over medium heat to dissolve sugar.

Increase heat and boil for 3 minutes. Transfer to a bowl and cool.
