Apple Apricot And Nut Chutney

1 kg green apples, peeled, cored and roughly chopped

125 g dried apricots, chopped

2 medium onions, finely chopped

1 clove garlic, roughly chopped

1 cup sultanas

¼ cup walnuts, roughly chopped

2 tsp salt

¼ tsp cayenne pepper

1 tsp ground ginger

1 cup malt vinegar

1 cup soft brown sugar

Combine apple, apricot, onion, garlic, sultanas, walnuts, salt, pepper, ginger and vinegar in a large heavy-based pan. Cook over low heat for 5 minutes, stirring occasionally. Simmer, with lid on, for 20 minutes.

Add sugar, cook stirring occasionally, for 10 minutes uncovered, until mixture is a jam-like consistency.

Pour mixture into hot sterilized jars and seal immediately. Leave chutney for 2 weeks before opening.
