Apple And Tomato Chutney

A nice fruity chutney with a hint of ginger

1 onion, skinned and finely chopped

450 g sultanas

450 g apples, cut into small pieces

450 g tomatoes, skinned and chopped

570 ml vinegar

½ tsp ground ginger

½ tsp pepper

450 g Demerara sugar

Boil the Demerara sugar in the vinegar until dissolved

Add the other ingredients and simmer gently for about 1 hour or until mixture is turned to pulp

Spoon into clean, hot jars then seal and label
