Spicy Thai Chicken With Basil

2 Tbs vegetable oil

600 g chicken drumsticks

1 ½ Tbs chicken stock

1 ½ Tbs hoi sin sauce

2 Tbs soy sauce

¼ tsp salt

1 tsp chilli flakes

1/8 tsp paprika

8 fresh basil leaves

1 green capsicum, cut into strips

1 red capsicum, cut into strips

Preheat oven to 190°C. Heat oil in large skillet over high heat. Stir-fry chicken for about 5 minutes.

Add chicken stock, sauces, salt, chilli flakes and paprika. Stir-fry 2 - 3 minutes. Spoon into baking dish. Cover and bake for 30 minutes.

Add basil and capsicums; continue baking, uncovered, 5 minutes. Serve with steamed rice, if desired.
