Carrot And Walnut Cake
Ingredients

carrots; grated

cup
chopped walnuts; optional
eggs

caster sugar
oil
tsp
vanilla
plain flour
bi-carbonate of soda
mixed spice
For frosting:
1 ½
Tbs
softened butter
3
cream cheese
grated lemon rind
cups
sifted icing sugar
Procedure
Preheat oven to 180°C.
Place all the ingredients apart from the carrots and the walnuts in a bowl. Beat on low speed until smooth. Stir in carrots and walnuts and mix well.
Pour mixture into well greased 20 cm ring tin. Bake at 180°C for approximately 45 minutes.

When cold; spread with frosting.
Beat butter and cream cheese until smooth. Beat in lemon rind and icing sugar.
