Carrot And Walnut Cake

2 medium carrots, grated

½ cup chopped walnuts

2 eggs

1 cup caster sugar

½ cup oil

½ tsp vanilla essence

1 cup plain flour

1 tsp bicarbonate of soda

½ tsp mixed spice

For frosting:

1 ½ Tbs softened butter

3 Tbs cream cheese

1 tsp grated lemon rind

1 ½ cups sifted icing sugar

Preheat oven to 200°C.

Place all the ingredients apart from the carrots and the walnuts in a bowl. Beat on low speed until smooth. Stir in carrots and walnuts and mix well.

Pour mixture into well greased 20 cm ring tin. Bake at 200°C for 45 - 50 minutes.

When cold spread with frosting.

For frosting:

Beat butter and cream cheese until smooth. Beat in lemon rind and icing sugar.

Servings: 1

Oven Temperature: 200°C

Cooking Time: 45 minutes
