cooked prawns; peeled, deveined, halved lengthways

Place the capsicum, cucumber, green onion, lime juice, soy sauce and hoi sin sauce in a bowl and stir until well combined.

Arrange the lettuce leaves on serving plates.

Divide the hoi sin mixture evenly between the lettuce leaves and top with the prawns. Serve with lemon wedges and extra hoi sin sauce if desired.

Tips
