Place the capsicum, cucumber, green onion, lime juice, soy sauce and hoi sin sauce in a bowl and stir until well combined. |

Arrange the lettuce leaves on serving plates. |

Divide the hoi sin mixture evenly between the lettuce leaves and top with the prawns. Serve with lemon wedges and extra hoi sin sauce if desired. |
