cooked prawns; peeled, deveined, tails intact

lime wedges, to serve

for Dijonnaise cream dressing:

½

cup

dijonnaise

½

cup

sour cream

Halve, deseed, peel and thickly slice avocados lengthways. Place in a bowl. Drizzle with 2 tablespoons lime juice. Add chives. Season with salt and pepper. Gently toss to combine.

Arrange lettuce, avocado mixture and prawns on a large serving platter.

Make dijonnaise cream dressing: Place dijonnaise, sour cream and 2 tablespoons lime juice in a small bowl. Season with salt and pepper. Stir to combine.

Drizzle dressing over avocado and prawns. Serve with lime wedges.
