small iceberg lettuce; cut into 4 wedges

firm, ripe avocados; thinly sliced

cooked prawns; peeled, deveined, tails left intact

2

mangoes; peeled, cut into thin wedges

½

cup

sour cream

1

lime; juiced

Arrange lettuce, avocado, prawns and three-quarters of the mango, on plates.

Combine sour cream, 2 tablespoons lime juice and remaining mango in a food processor. Process until the consistency of thickened cream, adding a little cold water if too thick.

Spoon mango sauce over salad. Season with salt and pepper. Serve.
