Combine the prawns, oil, garlic and ginger in a bowl. Cover with plastic wrap and refrigerate for 30 minutes to marinate. |

Heat a wok over a high heat. In batches, stir-fry the prawns for 1-2 minutes or until prawns turn pink. |

Return all the prawns to the wok. Add the bean shoots and water chestnuts, stir-fry for 1 minute. Add the spinach and oyster sauce and toss until combined and spinach has just wilted. Serve with cooked rice noodles. |
