Orange Chilli Duck Salad With Macadamia Nuts

Chinese cabbage; thinly sliced, chilled in cold water

red onion; cut in half, thinly sliced

snow peas; trimmed, cut into strips

medium

red capsicum; cut into strips

roasted duck breasts

¾

cup

roasted macadamia nut halves

For garnish :

ripe mangoes; flesh scooped out, cut into cubes

cup

coriander leaves; torn

For dressing :

Tbs

macadamia oil

tsp

orange rind; finely grated

1

tsp

sugar

fresh orange juice

Tbs

white wine vinegar

hot chilli flakes; or to taste

fish sauce

Pour boiling water over snow peas and capsicum in a bowl. Stand for about 1 minute, drain and rinse in cold water.

Thinly slice duck breasts. Drain cabbage and place in a bowl with other ingredients.

Toss through dressing. Garnish with mango and coriander.
