Loukomadies (Greek Doughnuts)

ouzo liqueur

instant potato mash powder

self-raising flour

honey

walnuts, finely chopped

ground cinnamon

vegetable oil, for deep-frying

Combine warm water and ouzo in a bowl. Add mash powder, salt, sugar and flour. Mix until well combined. Cover and set aside for 10 minutes to rest (dough will be soft and very sticky).

Heat oil in a deep saucepan, wok or deep fryer over medium heat until hot.

Using a wet teaspoon, drop balls of dough into hot oil, cooking 8 to 10 at a time. Cook, stirring occasionally, for 3 minutes or until golden and puffed (if oil is too hot loukomadies will brown and not cook all the way through). Using a slotted spoon, remove to a wire rack to drain.

Place honey in a heatproof, microwave-safe jug. Microwave on HIGH (100%) for 45 to 50 seconds or until honey is warm and runny. Place warm loukomadies in a large bowl. Drizzle over warm honey. Sprinkle with walnuts and cinnamon. Toss to coat. Serve.
