Ham And Celery Muffins

Chop ham and raw celery into muffins to serve with soup for a winter lunch or stuffed eggs and salad in summer. This mixture makes good muffins of any size, but it makes particularly nice mini-muffins.

self-raising flour

tasty cheese; grated

cup

ham; cubed

½

cup

celery; finely chopped

spring onions; chopped

parsley; chopped

egg

milk

wholegrain mustard

Measure the flour into a large bowl. Prepare the next 5 ingredients, adding each to the bowl with the flour as it is prepared. Cut the ham into 5mm cubes, and the celery into pieces smaller than the ham. Slice the white and green parts of the spring onions finely.

In another bowl beat together the egg, milk and mustard.

Tip the egg mixture into the large bowl, then fold everything together, taking care not to over mix.

Spoon the mixture into 18 - 24 mini-muffin pans.

Bake at 200°C for 10 minutes or until centres spring back when cooked.
