Garlic Prawn Rolls

small par-baked French bread rolls

150

g

unsalted butter

3

cloves

garlic; crushed

Tbs

chopped flat-leaf parsley

kg

cooked and peeled small prawns

Preheat the oven to 170°C.

Make a cut lengthways in the top of each bread roll and open out.

Place butter and garlic in a small saucepan over low heat and stir until butter has melted. Remove from heat and use a pastry brush to brush insides of the rolls with some of the garlic butter. Add parsley to the remaining garlic butter and stir in the prawns.

Fill each roll with the prawn mixture and place on a baking tray. Bake for 10 minutes until rolls are crisp and prawns are heated through. Serve hot.
