Fresh Strawberry Muffins 1

fresh strawberries; sliced

sugar

milk

egg; slightly beaten

butter; melted

Preheat oven to 200°C. Either grease the muffin pans, or line them with paper baking cups.

Combine the flour, baking powder, and salt in a large mixing bowl, and stir them together with a fork.

Mash ½ cup of the berries with the sugar in a small bowl. Add the mashed berries, remaining sliced berries, the milk or cream, egg, and melted butter to the dry ingredients and stir JUST enough to combine the ingredients.

Spoon the batter into the muffin pans, filling the cups about ¾ full. Bake for 12 to 15 minutes, or until a toothpick inserted in centre of a muffin comes out clean.

Serve warm, with butter, whipped cream and jam.
