Cinnamon Apple Nut Muffins

green apple; peeled, finely chopped

cup

sugar; divided

ground cinnamon

cup

flour

¾

cup

wholemeal flour

baking powder

¼

tsp

salt

cup

milk

Tbs

butter; melted

2

egg whites; lightly beaten

¼

cup

chopped walnuts

sugar for topping

Preheat oven to 200°C.

In small bowl, toss apple with ¼ cup of the sugar and the cinnamon.

In large bowl, combine remaining ¼ cup sugar, the flours, baking powder and salt.

Mix together milk, butter, and egg whites; stir into dry ingredients just until moistened.

Add apple and nuts.

Fill lightly greased muffin cups ¾ full; sprinkle each lightly with sugar.

Bake 20 to 25 minutes or until toothpick inserted in centre comes out clean.
