Champion Cheese Muffins

Everybody loves these muffins and they are easy enough to make often. If you make these muffins regularly, buy pre-grated tasty cheese to use in them. This will save you precious minutes as well as the skin on your knuckles.

tasty cheese; grated

1 ½

cups

self raising flour

salt

sugar

cayenne pepper

milk

Measure the grated cheese, self-raising flour, salt, sugar and cayenne pepper into a large bowl. Mix lightly with your fingertips to combine.

In a small container beat the eggs and milk until evenly combined. Pour all the liquid onto the dry ingredients, then fold the two mixtures together, taking care not to over mix.

Spoon mixture into 12 medium muffin pans, which have been sprayed with non-stick spray.

Bake at 210°C for about 12 minutes, until muffins spring back when pressed in the middle and are golden brown.

Optional topping: Sprinkle with a little extra cheese and paprika or chilli powder.
