Buttermilk Apple Muffins

vegetable oil

egg; beaten

apples; peeled, chopped

cup

buttermilk

cup

chopped walnuts

cinnamon

Preheat oven 160°C. Grease muffin cups

Blend ¾ cup brown sugar, oil, egg, and vanilla in large bowl.

Add flour, baking soda and salt. Add apple and buttermilk and mix thoroughly. Divide among cups.

Combine remaining brown sugar, walnuts, and cinnamon in small bowl. Sprinkle over batter.

Bake until muffins are brown and test done, 30-35 minutes.

Servings: 6

Yield: 6 Texas muffins or 12 medium muffins.
