Barbecued Prawn And Scallop Kebabs

prawns; unpeeled

olive oil

lime juice; fresh

Peel prawns, leaving tails intact, and deveined. Combine olive oil and remaining ingredients, pour over prawns and scallops.

Cover and refrigerate 1 hour, stirring occasionally. Remove prawns and scallops from marinade, discarding marinade.

Alternate prawns and scallops on 10 x 30cm skewers, grill, uncovered, over medium coals 175°C for 8 to 10 minutes on each side.

Tips

Cooking times may vary according to size of shrimp and scallops. They may be cooked on separate skewers to control the degree of done ness, if desired. Sea scallops are large, about 10cm in diameter, bay scallops are about the size of a nickel.
