Stir together in large mixing bowl the buttermilk, rolled oats, and raisins and let stand while preparing remaining ingredients:

Blend dry ingredients together in separate bowl.

Vigorously blend into rolled oats and buttermilk mix the egg and honey.

Blend dry ingredients into liquid ingredients just until mixed. Do not overmix!

Fold in grated apple.

Fill muffin cups to 2/3 full.

Bake 190°C for 20 minutes. Cool muffins in pan for 5 to 10 minutes for easy removal.
