Apple Date Muffins

wholemeal flour

plain flour

wheat bran

baking powder

baking soda

ground cinnamon

1/3

cup

dates; chopped

egg; lightly beaten

¼

cup

brown sugar; packed

Tbs

vegetable oil

cup

low-fat milk

1

cup

apple; grated, peeled

In a large bowl combine the wholemeal and plain flours, bran, baking powder, baking soda and cinnamon. Stir in the dates.

In another bowl, beat the egg with sugar and oil until well mixed, then stir in the milk and apple.

Pour into the flour mixture and stir just enough to moisten, being careful not to over mix.

Spoon into non-stick medium muffin tins, filling almost to the top. Bake at 190°C for about 20 minutes, or until firm to the touch.
