In a small bowl combine buttermilk, egg whites, and oil.

Add to dry ingredients; stir just till moistened. Stir in shredded apple.

Spray muffin cups with non-stick spray coating. Spoon batter into each muffin cup until 2/3 filled. Bake in a 190°C oven for 20 minutes or until a toothpick inserted near the centre comes out clean.
