Almost-Stuffed Pork Chops

pork loin chops

limes; juice and grated peel

cup

coarsely crumbled cracker crumbs

cup

fresh mushrooms; finely chopped

spring onion; chopped

Dijon style mustard

Tbs

dried parsley flakes

Preheat the oven to 180°C.

In a medium-sized bowl, combine the remaining ingredients.

Mix until well blended then spoon evenly over the top of the chops. Bake for 40 to 45 minutes, or until cooked through.

Brush both sides of the pork chops with the lime juice and place them in a 32cm x 22cm baking dish that has been coated with vegetable oil.

Servings: 4

Preparation Time: 20 minutes

Cooking Time: 45 minutes

Total Time: 1 hour and 5 minutes

Tips

These can be prepared, covered, and refrigerated overnight before baking. That way, you can put a fancy dinner on the table without having to do any last-minute preparation. I sometimes add ½ teaspoon dried ground coriander.
